Pho is one of the most popular Vietnamese dishes in the world. According to Oxford dictionary, Pho is a type of Vietnamese soup, typically made from beef stock and spices to which noodles and thinly sliced beef or chicken are added. Pretty simple isn't it! But what is the secret behind the simplicity?

We will discuss the history, the cooking process, and share the tips of making authentic Pho soup, as well as share the Indochine Pho recipe! We will also have tastings available.

This month we are highlighting our French Vinaigrette for salads and our Lemongrass Marinade for your chicken or pork barbeque this weekend!

French Vinaigrette (yield: 2c)

½ c white wine vinegar

½ tsp ground black pepper

1 ½ tsp salt

1 ½c salad oil

In a medium-sized stainless steel bowl, add vinegar, pepper, and salt. Whisk to dissolve. Add the oil

slowly and whisk rapidly to form an emulsion. Store in covered container. Whisk again before use.

This vinaigrette is perfect for mixed green salad.

Lemongrass marinade (for 2# of meat)

2oz grinded lemongrass

2oz grinded onion

1oz minced garlic

1oz white sugar

1oz chicken seasoning powder

2tsp fish sauce

2tbsp oil

In a medium-sized stainless steel bowl, add all ingredients and mix well.

This marinade is great for chicken or pork.

Cooking tip:

To avoid the cloudy stock, we need to bring the water to boiling before adding in the ingredients.
